Ruby Cooperabout this book: For me, I love veggies and for lunches several times each week, I love to eat just veggies. Since I am not a true vegan (just eat healthy), I found this cookbook has inspired me and I found MANY recipes in it that I really like.
My favorite one is called Vegan Apple Soup, this one the apples replace the potatoes and give added filling power and sweetness to the meal. In fact, I was suprised at how much it filled me up and it filled me up until dinnertime!
Since I am a huge soup and stew person, this book has just what I wanted to find. In fact, it has truly encouraged me to eat vegan meals more and more than I have in the past. These recipes are that good, I find that I do not miss the meat!
Highly recommend this book!
These recipes are good for the vegetarian on as sides for a regular meal. I have tried several of them, and from experience, the recipes are clear and easy to make. Who can beat 50 recipes for such a low price? It's just amazing! This book actually makes being a vegan much more fun. I highly recommend getting this one!
