Anita-Clare Fieldabout this book: Flavours is about precisely that, creating flavour and enjoying what you eat on your terms. The recipes are here to provide a guide only. Yes, in their own right they are completely delicious, but everyone has a very sophisticated palate, each one of us knows what we like, be it salty, sweet, hot or sour and before I start sounding even more like a Thai recipe, I'll just say this - make the recipe you are most happy with.
I was inspired to write this book because it seemed like a natural progression from the blog. Our readers were commenting on our recipes regularly and response to the idea of a book was hugely popular. It took six weeks to write, a lot of the recipes were already written down in digital format so it was just a case of writing introductions to the chapters and writing the forward.
Readers of this book are people who love food, not just love food but are prepared to experiment and try out cooking by taste and flavours rather than weights and measures. We have deliberately not put pictures in this book, because we want the emphasis to be on what the food tastes like not how it is presented, that is entirely personal interpretation and preference. In terms of the book title I felt one word said everything.
The book is about Flavours and how they are used. We spent a long time choosing the right cover and this one just jumped out at me completely. I think the hardest part about writing Flavours was choosing which of the recipes to use.
There are so many, we tried to go for ones that were slightly out of the ordinary to give our readers something new to try in the kitchen. I've learned a lot from writing this book, mainly about the discipline of writing each day and sticking to the deadlines you have set yourself. Also its important to take notice of your editor, keep an open mind to suggestions and be prepared to make changes.
I really hope people reading this book will enjoy playing with different flavours, experimenting and making additions to the recipes to make them their own. We love to hear from our readers both in terms of their own unique recipes and which flavours they love to cook with the most
