It was definitely rarely found in the South. But now things have changed. Wheat/Gluten allergies cross boundaries and affect all our personal lives. As a Southern woman raised on homemade goodies such as banana bread, fried chicken, sweet potato pie, I had to learn to live without wheat. The first years were stressful. But I persevered through testing familiar recipes that I grew up with and adapted popular ones that I found would work. Now, no one can tell the difference between my recipes and those with gluten. This book will also answer questions about the difference between gluten allergy and sensitivity. I hope that those who use the recipes will find the same enjoyment I had in making them. You will also find a listing of some nationwide restaurants that are considered gluten-friendly or have items which are gluten-free.
