Before we begin, a note on measurements. Our first books were very popular in the UK but not in the US because we lacked the necessary measurements to make it easy for our friends in the US to cook our recipes.
This has now been sorted!
We use decimal numbers for part measurements (0.5 for half, 0.33 for third, 0.66 for two thirds, 0.75 for three quarters). We don't mean to teach you guys to suck eggs, we just thought it a good idea to be clear!
All our recipes now feature ounces, grams, Fahrenheit and Celsius measurements.
This is a book of fantastic cookie recipes and you might just want to jump right in and try them out, but if you're interested, here in brief is the story of Fantastic Cookies and why we're letting you into our secrets.
Fantastic Cookies came about when a group of us got together to test out a business idea based on the concept of fantastic cookies. The idea sprang up when we realised we were all the owners of cookie recipes that had been passed down from generation to generation in each of our families.
We road tested. We baked. We adapted the recipes. We tried new slants on old ideas, new ingredients on vintage recipes. We tested new equipment and old – And it wasn't always the new that came out on top. We practised until we were perfect. Having crunched the biscuits, we crunched the numbers. And here came the end point. We had a fully costed business. We had fantastic cookies that would fly off the shelves. We had spreadsheets and graphs with maxima and minima and projected cash flows and profits. But you know what? It just wouldn't work as a business. At full capacity, the business would barely keep one of us off the streets.
It was a great idea, but it wasn't a business.
But we had generated some superb recipes and we couldn't bear to waste them. So we decided to share them with the world in this book.
