Ruby Cooperabout this book: For those who have adopted a vegan regimen or just want to reduce the amount of animal products in their diet, author Ruby Cooper offers fifty vegan desserts: cakes, cookies and bars, muffins and breads, and ice creams and smoothies. The recipes use no animal products, and that means no milk, cream, butter, cheese, or eggs. Instead, these are replaced by vegan options like tofu, coconut milk, and coconut oils. Most ingredients are readily available in supermarkets.
Recipes include a list of ingredients, estimated baking time (but not the overall preparation time), number of servings, and directions. Nutritional information, such as calories, fiber content, and grams of protein, carbohydrates, and fat, is not included. Some of the desserts have accompanying color photos of the ready-to-eat dessert.
Most recipes looked pretty tasty to me. Some were especially appealing or interesting, like the Matcha Cake. Ingredients for this cake included matcha powder and agave syrup, two items that I'm not familiar with, so I looked them up. Matcha is a finely ground green tea; agave syrup is a high-fructose sweetener made from the agave plant. (I also learned that agave syrup has a significantly lower glycemic index than table sugar; as a diabetic, that interests me.)
The book is definitely worth a look for anyone interested in a vegan lifestyle.
