Tracey Allenabout this book: This book is written by a celiac/gluten-free person with the desire to help others in the struggle to find easy to make, tasty bread products, while keeping within a food budget. The key features are the use of only one flour mix for all the recipes. The author's favourite recipe is the one recipe for wraps that can be made into three other products very easily – pita, taco shells, crackers.
Allen says, “It was difficult to develop a one flour fits all recipe and to develop recipes from scratch – more the measuring, since I tend to just roughly measure, if at all. The cookbook forced me to measure and record. The most rewarding part of writing the book is teaching the cooking classes; there is nothing quite like seeing people's faces light up when one they see it is so easy to make their own wraps and to that they don't fall a part.”
The cover is a picture some of the great food recipes that can be made including pita pockets. The pictures are all author taken to add to the simple and authentic nature of the cookbook.
